  • 2 packs instant ramen noodles
  • 4 cups low-sodium chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 1 cup carrots, thinly sliced
  • 1/4 cup green onions, chopped (for garnish)
  • 2 cups spinach or bok choy
  • 1 tsp sesame oil
  • 2 soft-boiled eggs (optional)

Instructions

  1. Gather all ingredients to keep the cooking process organized.
  2. In a large pot over medium heat, combine chicken broth, soy sauce, grated ginger, and sliced carrots. Bring to a gentle simmer.
  3. Add the ramen noodles and cook according to package instructions. During the last minute of cooking, stir in spinach or bok choy until wilted.
