  • 1 bell pepper, chopped (any color)
  • 1 medium zucchini, chopped
  • 1 medium red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop bell peppers, zucchini, and red onion into uniform bite-sized pieces.
  3. In a large bowl, combine chickpeas and vegetables. Drizzle with olive oil and sprinkle with salt, pepper, cumin powder, and paprika; toss well.
  4. Spread the mixture on a baking sheet lined with parchment paper in a single layer.
  5. Roast for 25-30 minutes until golden brown and fragrant, stirring halfway through.
  6. Remove from oven and squeeze fresh lemon juice over the bowl before serving.
