- 3–4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 medium sweet potatoes (about 2 cups, cubed)
- 2 ripe avocados
- ½ cup fresh cilantro, chopped
- 3 cloves garlic, minced
- Juice of 2 limes
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Season the chicken breasts with salt, pepper, cumin, and paprika.
- Peel and cube the sweet potatoes into bite-sized pieces. Toss with olive oil, salt, and paprika; spread on a baking sheet.
- Place the seasoned chicken on another baking sheet. Roast both trays in the oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- While cooking, mash the avocados in a bowl with lime juice, minced garlic, and chopped cilantro until creamy.
- Once cooked, slice the chicken into strips. In bowls, layer sweet potatoes at the bottom, followed by chicken slices and generous dollops of avocado mixture.
- Garnish with extra cilantro and chili flakes if desired.
