  • 34 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 medium sweet potatoes (about 2 cups, cubed)
  • 2 ripe avocados
  • ½ cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with salt, pepper, cumin, and paprika.
  2. Peel and cube the sweet potatoes into bite-sized pieces. Toss with olive oil, salt, and paprika; spread on a baking sheet.
  3. Place the seasoned chicken on another baking sheet. Roast both trays in the oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  4. While cooking, mash the avocados in a bowl with lime juice, minced garlic, and chopped cilantro until creamy.
  5. Once cooked, slice the chicken into strips. In bowls, layer sweet potatoes at the bottom, followed by chicken slices and generous dollops of avocado mixture.
  6. Garnish with extra cilantro and chili flakes if desired.
