- 2 cups fresh cranberries
- 1 cup rolled oats
- 1 cup light brown sugar (divided)
- 1 cup all-purpose flour (sifted)
- 1/2 cup unsalted butter (softened)
- 1 tsp baking powder
- 1 tsp pure vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine cranberries with half of the brown sugar and set aside to marinate.
- In another bowl, mix flour, oats, baking powder, remaining brown sugar, and salt. Cut in softened butter until crumbly.
- Press half of the crumble mixture into the bottom of the prepared pan. Spread marinated cranberries over it and top with remaining crumble mixture.
- Bake for 30–35 minutes or until golden brown. Allow to cool slightly before slicing into bars.
