Ingredients

  • 2 cups fresh cranberries
  • 1 cup rolled oats
  • 1 cup light brown sugar (divided)
  • 1 cup all-purpose flour (sifted)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine cranberries with half of the brown sugar and set aside to marinate.
  3. In another bowl, mix flour, oats, baking powder, remaining brown sugar, and salt. Cut in softened butter until crumbly.
  4. Press half of the crumble mixture into the bottom of the prepared pan. Spread marinated cranberries over it and top with remaining crumble mixture.
  5. Bake for 30–35 minutes or until golden brown. Allow to cool slightly before slicing into bars.
