  • 1 cup brown sugar, packed (light or dark)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 cup powdered sugar (for drizzle)
  • 2 tbsp milk (for drizzle)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs one at a time, mixing in vanilla extract until glossy.
  4. Gently fold in flour, baking powder, and cinnamon until just combined. Avoid overmixing.
  5. In a small bowl, combine softened butter, brown sugar, and extra cinnamon for the filling.
  6. Pour half of the batter into the prepared pan. Dollop with the cinnamon filling and cover with remaining batter.
  7. Bake for 25-30 minutes until golden brown edges form; the center should be set but slightly soft.
  8. Let cool before drizzling with a mixture of powdered sugar and milk.
