- 3–4 ripe bananas (mashed)
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, mash the bananas until smooth but slightly chunky.
- Cream together butter, granulated sugar, and brown sugar in another bowl until fluffy.
- Beat in eggs one at a time and add vanilla extract until well blended.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, stirring gently until just combined.
- Mix granulated sugar and cinnamon for the swirl; pour half of the batter into the loaf pan, sprinkle half of the cinnamon mixture over it, then add remaining batter and swirl in remaining cinnamon mixture with a knife.
- Bake for about 60 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool for ten minutes before transferring to a wire rack.
