  • 34 lbs beef roast (chuck or sirloin)
  • 1 cup cranberry sauce (whole berry preferred)
  • 1/2 cup balsamic vinegar
  • 45 cloves garlic (minced)
  • 1 large onion (diced)
  • 1 cup low-sodium beef broth
  • 4 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. Heat oil in a large skillet over medium-high heat and sear the beef roast on all sides for about 3-4 minutes until browned.
  3. Remove the roast and add diced onions and minced garlic to the skillet; sauté until translucent.
  4. In a bowl, mix cranberry sauce, balsamic vinegar, thyme leaves, salt, and pepper to create the glaze.
