  • 1 medium sweet onion, diced
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (14 oz) can full-fat coconut milk
  • 1/2 cup unsalted butter
  • 2 tablespoons curry powder
  • 1/2 cup tomato puree
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Dice chicken into bite-sized pieces and chop the onion.
  2. Mince garlic and grate ginger finely.
