- 1 cup cherry tomatoes, halved
- 1 cup English cucumber, diced
- 1 cup sweet corn (fresh or canned)

- 3 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1/4 cup fresh herbs (basil or parsley), chopped
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
- If using fresh corn, cook briefly until tender; if using canned corn, drain well.
- In a large bowl, combine cooled pasta with veggies, feta cheese, olive oil, lemon juice, and fresh herbs.
- Season with salt and pepper to taste. Mix well.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
