  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, combine warm water, yeast, and brown sugar; let sit until foamy (about 5 minutes).
  3. In a large bowl, whisk together flour, salt, and cinnamon. Add the yeast mixture and knead for about 10 minutes until smooth.
  4. Fold in soaked raisins and let the dough rise in a greased bowl covered with a towel for about an hour.
  5. Shape the risen dough into bagels by punching down and dividing it into equal pieces.
  6. Boil each bagel for 30-60 seconds on each side before placing them on a parchment-lined baking sheet.
  7. Brush with egg wash and bake for 20-25 minutes until golden brown.
