  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs (room temperature)
  • ½ cup whole milk
  • ¼ cup melted butter
  • 2 tbsp granulated sugar + 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In one bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, blend the pumpkin puree, melted butter, sugar, eggs, and milk until smooth.
  4. Fold the dry ingredients into the wet mixture gently until just combined.
  5. Fill each mini muffin cup two-thirds full with batter.
  6. Combine the cinnamon and sugar for the topping, then sprinkle generously over each muffin.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
