- 1 lb lean ground beef or turkey
- 1 can (15 oz) black beans, rinsed
- 1 cup white or brown rice
- 1 cup cherry tomatoes, diced
- 1 ripe avocado, sliced
- 2 cups romaine lettuce or spinach, chopped
- 1 cup corn (fresh or frozen)
- ½ cup sour cream
- 1 cup shredded cheddar or Mexican blend cheese
- 2 tbsp taco seasoning
Instructions
- In a skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes.
- Drain excess fat if necessary, then stir in taco seasoning and a splash of water; simmer for 2 minutes.
- Cook rice according to package instructions (approximately 15-20 minutes).
- While the rice cooks, dice tomatoes and slice avocado.
- In serving bowls, layer rice first, followed by meat, black beans, corn, lettuce, tomatoes, avocado slices, sour cream dollops, and cheese on top.
