  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups mixed vegetables (bell peppers, carrots, snow peas)
  • 8 oz lo mein noodles
  • 1 tbsp sesame oil
  • 2 green onions, sliced

Instructions

  1. Chop the chicken into bite-sized pieces and dice the vegetables.
  2. Layer the chicken in the crockpot and top with garlic, ginger, soy sauce, and sesame oil.
  3. Add the mixed vegetables on top of the chicken mixture.
  4. Cook on low for 6 hours or high for 3 hours.
  5. About 15 minutes before serving, cook the lo mein noodles according to package instructions; drain well.
  6. Gently mix cooked noodles with the chicken mixture and serve garnished with green onions.
