  • 34 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 2 large yellow onions, diced
  • 6 garlic cloves, minced
  • 28 oz can crushed tomatoes
  • 1 cup low-sodium beef broth
  • 1 cup dry red wine (Merlot or Chianti)
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (4-5 minutes per side). Remove from pot.
  2. In the same pot, add chopped onions and carrots; sauté for about 5 minutes until fragrant.
  3. Stir in minced garlic and cook for an additional minute. Pour in crushed tomatoes, red wine, and beef broth while scraping up browned bits from the bottom of the pot.
  4. Return the seared roast to the pot, sprinkle with dried herbs, and cover tightly.
  5. Reduce heat to low and slow cook for 3-4 hours until fork-tender or place in an oven at 300°F (150°C) for slow roasting.
  6. Let rest before slicing; serve with crusty bread or creamy polenta.
